Grain-free bread & butter

If you have a stand mixer with a paddle attachment, these buns will only need 20' of work - for 8 to 15 buns .
Who said we couldn't enjoy bread and butter when on a diet?!

Equipment

  • 1 Stand mixer with paddle attachment
  • 8 stainless steel circles (see notes below if you don't own any)

Ingredients

  • 50 g almond flour
  • 16 g coconut flour
  • 255 g cashew butter (see above for recipe)
  • 20 g olive oil
  • 3 eggs
  • 1 tsp salt
  • 1 tsp honey (up to 2 tsp for a sweeter bread)
  • 15 g water
  • 15 g apple cider vinegar
  • 6 g baking soda

Instructions

  • In a large mixing bowl, mix cashew butter, eggs and honey. A whisk or a paddle attachment both work.
    Add water, apple cider vinegar and olive oil, and mix well.
  • Add almond flour, coconut flour, and salt, and mix again. While mixing at high speed, add the baking soda and mix vigourously, but not for too long ( 15 seconds is usually enough at max speed).
    The chemical reaction between the vinegar and baking soda will as soon as they touch each other, and you want to keep as many bubbles as possible.
  • Preheat oven to 315°F (155°C). While preheating, grease stainless steel circles with olive oil, and spoon the dough in each circle. Try to even the top with the back of your spoon. Dough should be thick and sticky.
  • Cook for 12 to 15' ( depending on the oven). Check with a knife inserted inside, it should come out clean.
  • Let them cool for a few minutes, then carefully insert a knife around the breads to take them out of the circles. Leave them to cool on a rack ( to avoid humidity).
  • Keep in an airtight container in the fridge for up to 5 days ( if they last that long.....), or cut in half and freeze them. Defrost in the toaster.

    And if you have none of the above, you may have an avocado waiting on your kitchen countertop. Slice it, add salt and pepper, smoked paprika if you like, and you'll enjoy one of the best breakfast around - especially with scrambled eggs on the side, or dropped on the avocado :-)

Notes

Stainless steel circles, any diameter from 5 cm to 10 cm will work. If you're planning to make some toasts or burgers, the 10 cm are more convenient.
If you don't have this material, you can spoon the dough on a sheet pan. Leave space between all breads, as they will spread a bit.
They will also cook faster than thicker breads, so watch the oven closely. You want them moist, not overcooked.
