Equipment
1 or 2 silicone moulds (use paper cups if you don't on any mould)
Ingredients
150gsalted peanuts
100gpeanut butterno additive, no sugar
120ghoney
1tspvanilla flavor
White chocolate coating (optional)
75gcoca butter
1tbspvanilla flavor
60ghoney
Instructions
Chop peanuts a food processor, or with a knife, or a mortar, if you don't own any food processor.
In a large pot on medium heat, warm peanut butter, honey, and vanilla until everything is well combined. Turn off the heat.
Add the chopped peanuts.
Drop spoons of the mixture in silicone moulds, or paper cups, to make bars or bites. If you're using paper cups, use an ice-cream scoop, it's amazingly efficient ! ( see picture above).
Keep in the fridge for a soft texture (our fav'), or in the freezer for a harder one.
Coating ( optional)
If you're willing to coat them with white chocolate, pour the peanut mixture in the moulds and freeze for 30'. In the meantime, heat the ingredients of the coating in a small pot, on low heat.
Once everything has melted, dip each bite/bar in the white chocolate. Delicately drop the bar back into its mould (it doesn't have to fit in, it's just to let them set), then freeze for 30'.
