
This is the perfect Sunday breakfast. Or weekday lunch. Or snack. Actually…. it may be the best and healthiest snack ever.
The moist and flavorful bun is topped with vegan cream cheese, crunchy cucumber, juicy bell pepper and salty smoked salmon.

Do you remember the day we made the best grain-free buns ? Hopefully you have some left in the fridge, or freezer.
You’re just going to combine the bun with SCD staples you most probably already have in your fridge : vegan cream-cheese ( or regular SCD cream-cheese), smoked salmon and cucumber. Bell pepper and tomatoes are optional.
That’s it !!!
PS : if you don’t have any smoked salmon…. you may use a slice of prosciutto !
Smoked Salmon & Cream Cheese toasts
Ingredients
- 1 cashew Bun
- 2 slice of smoked salmon
- 2 Tbsp vegan cream-cheese
- 2 slice red of yellow bell pepper (cut lenghtwise, optional)
- 12 thick slices of cucumber
- Chives to taste (optional)
Instructions
- Cut the bun in half, toast the 2 pieces.Let them cool a bit.
- On each half, spread 1tbsp of cream cheese, add 12 cucumber slices, 1 bell pepper slice, and then topped with piece of smoked salmon.Sprinkle minced chives if you like.Easy. Tasty. Healthy. Ready !
