Raaaah !!!! These candy bites.
Very dangerous.
You eat one, and then, you’ll find yourself cleaning up the whole batch !
Worst of all ? I made 3 scrumptious variations…..and they’re all ready in less than 15′. Raaaaaaaaahhhhhh !!
Go get your some silicone moulds, or paper cups, you’ll need them all – repeatedly 🙂
Thanks to Elana’s pantry for her candy bars, which inspired this recipe.

Instructions are SO simple. Even my kids can make them. And they do. Again and again. This version is their favorite.
Basically you’re going to weight the ingredients except peanuts, and put them on the stove on low heat.
While it’s melting, you just need to crush the peanuts. A mortar or a knife work, a stand mixer as well ( especially if you’re making triple batches like my kids do…. stand mixer is definitely faster 😉 ).
You may as well keep the peanuts whole, if you’re in a hurry ! Bites will just have a “rocky” aspect, and you’ll have less pieces. but ti’s also very, very good 🙂
Pour the chopped peanuts into the mix of butter and honey. Mix well.

Pour into moulds. Done. Freeze for 30′ and store in the fridge for 3 weeks.
They will be slightly sticky once thawed, so, if you don’t coat them, keep them in their moulds / cups until ready to eat. We did try to coat them, but they’re actually so good that they don’t need the coating…..;-)

Triple batch.
Best ever candy bites #1 : Peanut !
Equipment
- 1 or 2 silicone moulds (use paper cups if you don't on any mould)
Ingredients
- 150 g salted peanuts
- 100 g peanut butter no additive, no sugar
- 120 g honey
- 1 tsp vanilla flavor
White chocolate coating (optional)
- 75 g coca butter
- 1 tbsp vanilla flavor
- 60 g honey
Instructions
- Chop peanuts a food processor, or with a knife, or a mortar, if you don't own any food processor.
- In a large pot on medium heat, warm peanut butter, honey, and vanilla until everything is well combined. Turn off the heat.
- Add the chopped peanuts.
- Drop spoons of the mixture in silicone moulds, or paper cups, to make bars or bites. If you're using paper cups, use an ice-cream scoop, it's amazingly efficient ! ( see picture above).
- Keep in the fridge for a soft texture (our fav'), or in the freezer for a harder one.
Coating ( optional)
- If you're willing to coat them with white chocolate, pour the peanut mixture in the moulds and freeze for 30'. In the meantime, heat the ingredients of the coating in a small pot, on low heat.
- Once everything has melted, dip each bite/bar in the white chocolate. Delicately drop the bar back into its mould (it doesn't have to fit in, it's just to let them set), then freeze for 30'.
- Store in the fridge.
