
Homemade nuts butters can’t compare with store-bought. It’s a fact.
Cashew butter, with its creaminess and savory/sweet flavor, is a staple in a grain-free diet. It’s is easy to make in large quantities, and you can save it for months in the fridge.
Prepare a double batch, and use it to make buns, cashew candy bites and cashew milk on a regular basis (check recipe at the end of this post).

Actually, this butter requires very little hands-on efforts. Most of the prep time is cooking time, and you don’t need to watch.
Basically, you need raw cashews, and you’re going to roast them. I use these stainless steel sheet pans, which are very convenient.
I know you’re going to ask which cashews are the best : these, excellent but quite expensive, or those, good and more affordable.

Once cashews are done, let them cool, blend them for 1 to 2 minutes in a high-speed blender…. and voilà! Cashew butter.
Easy. Tasty. Healthy 🙂

Now that’s when things become very interesting. We’re talking about saving time in the kitchen.
Leave about 75g of cashew butter in the blender ( about 3/4 cup – it doesn’t have to be accurate. You can adjust to your liking after making the milk once, depending on the level of creaminess and thickness you want. No worries !)

Add water, just enough to cover the butter. Blend for 20′ at high speed.


Now fill with cold water to 1L. Blend again.

And voilà again ! 3′ and now, you also have a large jug of cashew milk for your breakfast, for soups, for snacks…..
If you like sweet milk, you may add a tsp vanilla and 1-2 tsp of honey before blending. The sweet version is really awesome with this instant decaffeinated coffee – or regular :-).
If you’re more into freshly brewed coffee, I own this FANTASTIC Breville Coffee machine. Another of my BFF after my Vitamix blender. Not only does it offer a lot of pre-set programs ( espresso, lungo, cappuccino, latte macchiato, milk….), but the settings are also adjustable (coffee volume, milk temperature and milk texture :-D) .
Basically, I set up the mik program to a kids-friendly temperature, bought the kids another jug ( one is provided with the machine), and now they can heat their milk all by themselves. Less dishes, kids safe, Mom happy !
Bonus: your blender is now pre-cleaned, and can go directly in the dishwasher 🙂

Cashew Butter (& 3′ easy cashew milk)
Ingredients
- 600 g Raw cashews
- 1 tsp Vanilla flavor (optional)
- 1 tsp Honey (optional)
Instructions
- Roast the cashews at 140°C (280°C) for 30'.Let them cool thoroughly (very important).
- Once cooled, blend them at max speed for about 1' in a high-speed blender.
- Empty the blender and save the cashew butter in the fridge for months. Leave about 75g (3/4 cup) of cashew butter in the blender for the 3' cashew milk below.
- Cover with cold water.
- Mix for 20' at max speed.
- Add water up to 1 L.If you like a sweeter milk, add 1 tsp to 1 tbsp of vanilla flavour, and 1-2 tsp of honey.Skip vanilla and honey if you like it plain. I do like to keep it plain to use it in different dishes, but the sweeter version is also very nice, especially in coffee 🙂 Mix for 20 more seconds at max speed.
- Save in the fridge for up to 3 days.
- Bonus : your blender is now pre-cleaned, and can go directly in the dishwasher 🙂
