
These are ready in 15′. Interesting isn’t it?
Shopping list:
- fresh shrimps (or thawed if you can’t get fresh ones, but you’ll get lots of water and vegetables will be very well cooked instead of al dente)
- 2 peppers, colors of your choice
- tomatoes (any kind)
- onions
- chives, or parsley, or cilantro
- salt, pepper to taste, chipotle powder if you like.
Mediterranean style shrimps
Fresh, light yet satisfying, these shrimps will lighten any dinner.
Ingredients
- 2 bell peppers, colors of your choice
- 2 large tomatoes (or eq. with other types of tomato)
- 2 lbs fresh shrimps, peeled and deveined
- 1 onion, minced (I use diced frozen onions)
- 1 tbsp olive oil
- Fresh chives, parsley, or cilantro
- 1 tsp chipotle powder (optional)
Instructions
- On medium heat, saute the onion in olive oil until there's no more water, and pieces start to stick to the bottom of the pan.While you wait, cut the peppers in large chunks.
- Add miced peppers and sauté 4-5'. Cut tomatoes in large chuncks while you wait.
- Add tomatoes and shrimps, and chipotle if using.
- Reduce heat to minimum, cover partially with a lid and simmer for 5'. Don't cover completely or the dish with be watery.
- Add minced herbs on top and serve warm!

You may add a good tomato sauce with the shrimps, if you ant a richer sauce. But it’s not necessary.
Add some quinoa, rice or lentils pasta on the side if not SCD. Serve with plain French lentils, or lentils bread, if you’re SCD and in need of something more filling.
